Celebrating 78 Years of Indian Independence
This August, CÀSÀ proudly presents "A Culinary Journey Through Freedom", a fine dining experience in tribute to the 78th year of India’s independence.
Inspired by the bold colours of the Indian flag and the nation’s rich culinary diversity, this five-course tasting menu reimagines heritage through a contemporary lens—bringing together tradition, artistry, and innovation on every plate.
Each course is thoughtfully crafted to represent saffron, white, and green, paying homage not just to ingredients and regions, but to the stories, cultures, and spirit of India. The dishes will be served on custom khadi-textured chargers—a symbolic nod to India’s independence movement—and accompanied by miniature bronze flag holders to elevate the celebration.
The Experience Includes:
Amuse Bouche – Tricolour Spheres
A burst-in-the-mouth introduction: saffron rasam with Guntur chilli, coconut milk foam, and a green coriander-mint chutney—engineered with reverse-spherification.
Soup – Santre ka Shorba
A Kashmiri-inspired clear broth with orange reduction, turnip pearls, and cardamom air to evoke the mists of the valley.
Starter – Achari Chicken Tikka Roulade
Sous-vide rolled chicken in pickling spices, finished over charcoal and plated with a tricolour ribbon salad.
Main Course Duo
- Hyderabadi Gosht Kacchi Biryani – slow-marinated lamb sealed in saffron-rose dough, cracked open tableside.
- Kanyakumari Meen Kulambu – seared seer fish in a tamarind-coconut curry, served in a clay pot.
Accompanied by tricolour parathas and pineapple-mint raita.
Dessert – Tiranga Canvas
A plated tribute: saffron crème brûlée shard, white chocolate mousse Ashoka Chakra, and pistachio-cardamom sponge soil.
Tea & Petit Fours
Masala chai crème brûlée in clay kulhads, tricolour peda truffles, and gulkand macarons.
