At CÀSÀ, our program delves into the essence of this cuisine, where every dish tells a story. From the fragrant saffron-infused rice dishes like plov to the hearty stews and kebabs, each recipe is a reflection of Azerbaijan’s rich cultural tapestry. Participants will learn not only the techniques behind these traditional dishes but also the history and cultural significance that makes Azerbaijani cuisine so special.
The Azerbaijani Cuisine Diploma Program is a comprehensive course tailored for individuals with beginner-level cooking skills who are eager to explore and master Azerbaijani culinary traditions. Spanning 36 sessions over 12 weeks, each lasting 3 ½ to 4 hours, the program delves deeply into the history, culture, ingredients, techniques, and dishes that define Azerbaijani cuisine. Students will gain hands-on experience preparing and tasting a wide range of traditional dishes under the expert guidance of seasoned instructors. The curriculum includes practical training in using both traditional cooking tools, such as “tandir” ovens and “saj” griddles, and modern kitchen appliances. Weekly topics cover Azerbaijani herbs and spices, soups, stews, rice dishes, main courses, and sweets, culminating in the creation of a modern Azerbaijani wedding menu. The program concludes with a final exam to assess students' knowledge and skills. Graduates will receive a diploma recognizing their proficiency in Azerbaijani cuisine, equipping them to pursue careers in culinary arts or simply enjoy sharing their newfound skills with others.

By the end of this programme, participant will:
- Gain comprehensive knowledge of Azerbaijani cuisine, including its history, ingredients, techniques, and cultural significance.
- Learn to peel, clean, trim, and cut vegetables and fruits, and pit fruits.
- Master the skills of portioning, butchering, filleting, and marinating beef, lamb, chicken, and fish.
- Develop proficiency in preparing, cooking, and presenting various traditional dishes, soups, and rice dishes.
- Acquire techniques for preparing and rolling pastries, folding dumplings and pies, baking sponges, and decorating cakes.
- Learn to make a variety of sweets, creams, and traditional desserts, including pulling sugar and frying flour.
- Understand how to create menus, write recipes, calculate costs, plan events, and set up stations.
- Gain hands-on experience with special techniques and traditional equipment, including using “sac” and making various outdoor dishes.
On successful completion of the course, you will receive a Certificate of Completion for the Azerbaijan Cuisine Diploma Programme Certificate issued by the Culinary Art Center of Azerbaijan (CÀSÀ).
